Sides: 14 ingredient potato salad. Totally worth it.

My husband tells me that the whitest thing about me is my love of mayonnaise (real mayo, not that sweet salad dressing type crap). But sometimes, like when it is 38 with the humidex, you just don’t want mayo. That’s when you break out an assortment of other salads obviously but in case you have to have potato salad, like with ribs, make this one:

Whisk together: 

1 small bunch chives finely chopped

1/4 cup white balsamic vinegar

1/4 cup avocado oil

1 tbsp smooth Dijon mustard

2 anchovies in oil, mashed (don’t flinch! It will not taste fishy! This is depth of flavour and umami!)

A handful or parsley, chiffonade

1/2 bunch mint, chiffonade

Pour over:

2 roasted red peppers, julienned 

1/2 cup chopped artichoke hearts in oil 

1/4 cup pitted and chopped kalamata olives

1/2 cup feta or 1/4 cup Gorgonzola (omit if going dairy free obviously)

3 cups roughly cut (not too small) cooked red potatoes

Season with salt and pepper

It’s herby, tangy and filling. It’s great for egg allergies, dairy allergies if you skip the cheese and vegetarian if you skip the anchovies. It also won’t kill you the way a mayo coated one will in this heat!
